Mixing it up
Whenever I make corn muffins from the Jiffy mix in the blue and white and red box with the wax paper lining, I think of him. We were having chili for dinner and he asked there there was anything he could help with. Sure I said, you can mix the cornbread. When I handed him the blue and white and red box, he chuckled. I've made them so often I've memorized what to add: 1/3 cup of milk and one egg ... but still, I check the recipe. He dumped the mix into a bowl, cracked the egg, and questioned whether 1/3 cup of milk was enough. Surely not, he said. Keep stirring, I said. Huh, he said, just right. We filled the paper cups, and slid the cupcake tray onto the second shelf of the preheated oven and set the timer. Ready in a jiff. ------- I'm never sure if I like the Jiffy mix because the muffins are good (they are), or whether it's the simplicity of the box with the wax paper liner, and how easy it is to make them. Is there a dish or recipe that reminds you of someone?

It's been a long time since I've had cornbread from Jiffy mix. Thanks for the reminder. Also, I've made a delicious corn pudding w it, too. You're making me hungry!

Corn pudding is right up there w cabbage/carrots in lemon jello. lol! For some families, it's a staple at the Thanksgiving table. Leave a Reply. |
